Sweet and savory, this Molasses Mustard Glazed Grilled Chicken is the definition of summertime grilling. The charcoal grill imparts such a distinctive flavor that cannot be replicated by a gas grill. This glaze works well with any meat and can be made ahead and stored in the refrigerator until you are ready to grill.

- 1 whole chicken cut into pieces
- 1/4 cup cider vinegar
- 1/2 cup brown mustard
- 1 cup dark molasses
- 4 tsp salt
- 2 tsp pepper
- Light grill with charcoal placing coals on one side of the grill
- Once grill is hot, combine all glaze ingredients in a grill-proof pot (cast iron), mix well, put onto coal side of grill and bring to simmer. Simmer for 3 minutes, then remove pot from grill.
- Place chicken on side of grill opposite of hot coals – salt and pepper chicken then cover the grill and grill (350 degrees for a total of 1 hour) – 20 minutes into cooking, brush on glaze, cover and cook for another 15 minutes and then brush glaze on again and cook for another 15 minutes. Cook for another 10 minutes and brush on a final glaze. Cook another few minutes over the coals and take off grill.
