Traditional corned beef or pastrami Reubens are one of my favorite sandwiches, but I try not to eat them too frequently. For one, I rarely have corned beef or pastrami on hand and … those meats, though delicious, are a bit high in fat and calories.
With that said, I crave the combination of meat, sauerkraut, cheese and Russian dressing. Because this sandwich has so much going on with it, I find that replacing the corned beef or pastrami for chicken works well and still gives me the satisfaction of having had a deliciously sinful Reuben with far fewer calories.
Feel free to replace the rye bread for pumpernickel bread. Some prefer coleslaw over sauerkraut. Both are great on this sandwich.
